Strawberry Dessert

1 can strawberry pie filling
1 can crushed pineapple, drained
1 can sweetened condensed milk
l large carton cool whip
red food coloring (optional)

Combine pie filling, pineapple and milk. Fold Cool whip into the
strawberry mixture. Tint with food coloring. Chill until serving time.
(can be frozen)

Frosty Squares

1 cup flour
¼ cup brown sugar
½ cup chopped walnuts
½ cup butter or margarine, melted
2 egg whites
1 cup sugar
2 cups fresh sliced berries OR 1-10 oz pkg frozen berries,
partially thawed. (if using frozen, reduce sugar to 2/3 cup)
2 tbsp lemon juice
1 cup whipping cream, whipped

Stir together first 4 ingredients; spread evenly in shallow baking pan.
Bake at 350F for 20 minutes, stirring occasionally. Sprinkle 2/3 of
crumbs in 9x13 pan.

Combine egg whites, sugar, berries and lemon juice in large bowl.
With electric beater, beat at high speed to stiff peaks, about
10 minutes. Bold in whipped cream.

Spoon over crumbs; top with remaining crumbs. Freeze 6 hours
or overnight. Cut into 10-12 squares.

Cracklin' Biscuits

The Cajuns, always looking for variation in recipes, certainly created a
Winner here. Adding the hog cracklin' to the biscuit mixture created a
Unique breakfast item. If you don't have cracklin's, you may wish to
Substitute salted pork skins.
Ingredients:
4 cups all purpose flour
2/3 cup unsalted butter
2 TBS. Baking powder
1 1/2 cups buttermilk
1 tsp. Baking soda
3/4 cup chopped hog cracklin's
1 1/2 TBS. Sugar
1/4 cup melted butter
1 tsp. Salt

Preheat oven to 400 degrees F. In a large mixing bowl, combine flour, baking
Powder, baking soda, sugar and salt. Mix well to ensure proper blending.
Using a pastry blender, cut 2/3 cup of butter into flour mixture. Once
Butter has been well blended into flour, add buttermilk and chopped
Cracklin's'. Continue to mix until biscuit dough is well formed. Place dough
On a floured board and knead lightly. Roll dough out until approximately
3/4-inch thick. Cut biscuits with a 3-inch biscuit cutter until all are
Formed. Place biscuits in a greased 12-inch Lodge cast iron skillet and
Drizzle with remaining melted butter. Bake until golden brown, approximately
25 minutes.

Sausage Grits

1 pound bulk pork sausage
3 cups hot cooked grits
2 1/2 cups shredded Cheddar cheese
3 tablespoons butter or margarine
3 beaten eggs
1 1/2 cups milk parsley and pimento strips for garnish

Cook sausage until browned in a heavy skillet, drain well. Spoon into a lightly greased 13x9 inch baking dish. Combine hot cooked grits, cheese and butter. Stir until cheese and butter melts. Combine eggs and milk, stir into grits. Pour into baking dish over sausage. Bake at 350 degrees for 1 hour. Garnish with pimento strips and parsley, if desired. Let's do breakfast for supper. Yield: 15 servings

Blueberry Pound Cake

1 box butter cake mix
1 (8 oz.) pkg. cream cheese, softened
1/2 c. corn oil
3 eggs
1 (15 oz.) can whole blueberries, drained

Mix all ingredients except blueberries until smooth. Fold in
blueberries. Pour in greased and floured tube pan. Bake at 325 degrees
for 1 hour or until done.

Hamburger Patties

Ingredients
  • 1 lb. hamburger
  • 1 cup cornflakes or Rice Krispies
  • 3/4 cup milk
  • 1 egg
  • 1 small onion, diced
  • 1/2 tsp. nutmeg
  • salt and pepper
  • 1 can cream of mushroom our celery soup
  • 1 cup milk
  • 1/2 cup water
Directions
Mix meat, flakes, milk and eggs and seasonings. Form patties. Flour patties and brown. Pour soup, water and milk mixture over them and simmer for 1 hour or less. Put them in the oven. Bake until brown. About 1 hour.

Frozen Jubilee Pie

Ingredients
  • 2 cups powdered sugar
  • 1/2 cup margarine
  • 2 squares unsweetened chocolate, melted
  • 1 tsp. vanilla
  • 3 eggs, separated
  • 1 qt. softened vanilla ice cream
  • 1/2 cup chopped nuts
  • 1 graham cracker or vanilla wafer crust
Directions
Cream sugar and margarine. Add chocolate and vanilla and mix thoroughly. Add egg yolks and beat well. Fold in 3 beaten egg whites. Spread on crust and chill. top mixture with ice cream. Sprinkle with chopped nuts. Freeze. Cut in serving pieces and top with hot fudge sauce, if desired.

I'm going to have to say, I have not tried this, but sounded like one I will give a try.LOL. This was posted on a yahoo group I'm a member of. Let me know if you try it.

Homemade Powdered Coffee Creamer

After running out of my store purchased coffee creamer, I looked for alternatives and I combined several ideas to make a great powder coffee creamer. By adding other items like cocoa, other sugars, or spices you can develop additional flavors.
Ingredients
  • 1/2 cup uncooked white rice
  • 1/2 cup powderd milk
  • 1/4 cup sugar
Directions
Put the rice in a blender for 5 minutes on highest setting to form a powder. Add the milk and sugar and again blend for only a few minutes.
I had some concerns using sugar as I do not like sugar in my coffee but I was surprised to find that I could not taste the sugar. I was looking for something as close to "CoffeeMate" as I can get. It also appears to somewhat reduce the acid content of the coffee. I hope you enjoy it as I do

Chocolate Cherry Squares

Ingredients
  • 1 1/4 cups graham cracker crumbs
  • 2 Tbsp. sugar
  • 1/4 cup melted margarine
  • 1 package (4 oz.) German sweet chocolate
  • 1/4 cup water
  • 8 oz. Cool Whip
  • 3 oz. cream cheese
  • 21 oz. cherry pie filling
Directions
Combine crumbs, sugar and butter. Press into 9 inch square pan. Chill. Stir chocolate and water over low heat until smooth. Beat cream cheese until fluffy. Beat in chocolate. Fold into Cool Whip. Spread over crumbs. Top with pie filling. Chill. Garnish with remaining Cool Whip.

EASY FRIED RICE

1/4 cup olive oil
4 cups cooked rice
2 cloves garlic, finely minced
1 envelope dry onion soup mix
1/2 cup water
1 Tbsp soy sauce
1 cup frozen peas, partially thawed
2 eggs, slightly beaten and scrambled in pan

In skillet, heat oil over med high heat and warm rice. Stirring constantly
for 2 minutes. Stir in garlic. Stir in soup mix blended with water and soy
sauce. Cook 1 minute. Stir in peas. Cook 2 minutes. Stir in cooked eggs.

Potato Pizza Casserole
"This is a great recipe for pizza lovers!

PREP TIME *5 Min*
COOK TIME *45 Min*
READY IN *50 Min*
SERVINGS 8 servings*

INGREDIENTS

1 pound ground beef
1 small onion, chopped
salt and pepper to taste
1/4 teaspoon garlic powder
5 cups peeled and thinly sliced potatoes
1 (3 ounce) package chopped pepperoni
1 (10.75 ounce) can condensed tomato soup
1 (10.75 ounce) can condensed Cheddar cheese soup
1/2 cup milk
1/2 teaspoon dried oregano
1/4 teaspoon Italian seasoning
1/2 teaspoon brown sugar
8 ounces shredded mozzarella cheese

DIRECTIONS

1. Preheat the oven to 350 degrees F (175 degrees C). Cook the ground
beef and
onion in a large skillet over medium heat until evenly browned.Drain
off grease.
Season with salt, pepper, and garlic powder.
2. Spread the sliced potatoes in a layer on the bottom of a 9x13 inch
baking
dish. Spread the ground beef and onion over the potatoes. Place
slices of
pepperoni over the ground beef. In a saucepan over medium
heat,combine the
tomato soup, Cheddar cheese soup, and milk. Season with
oregano,Italian
seasoning, and brown sugar. Mix well, and cook until heated through.
Pour over
the contents of the baking dish.
3. Cover the dish with aluminum foil, and bake for 30 minutes in the
preheated
oven. Remove the aluminum foil, sprinkle mozzarella cheese over the
top, and
bake for an additional 15 minutes, until the cheese is melted and
bubbly.

Applesauce Spice Bars

1 cup flour
2/3 cup packed brown sugar
1 tsp baking soda
1/2 tsp salt
1 tsp pumpkin pie spice
1/4 cup shortening
1 cup applesauce
1 egg
1 cup raisins, optional

Frosting:
3 T butter
1 1/2 cups powdered sugar
1 tsp vanilla
1 to 1 1/2 T milk

Preheat oven to 350 degrees. In a large bowl, combine flour, sugar,
baking
soda, salt, pumpkin pie spice, shortening, applesauce, egg and
raisins; mix
thoroughly. Spread in a greased 13x9-inch baking pan. Bake for 25
minutes.
Let cool.

Frosting:
Heat butter in a saucepan over medium heat until it turns a delicate
brown;
remove from heat. Blend in remaining ingredients; beat until frosting
is smooth
and makes a spreading consistency. Spread on cooled bars. Cut into
1x3-inch
bars. Yields 2 1/2 to 3 dozen

Savory Sweet Potato Sticks

3 med. sweet potatoes (about 1 1/2 lbs.)
3 C. rice Krispies, crushed to 3/4 C.
1/2 tsp. garlic salt
1/8 tsp. cayenne pepper
4 tsp. onion salt
1/2 C. all-purpose flour
2 egg whites
2 T. water
vegetable cooking spray
salsa (optional)

Wash potatoes and cut lengthwise into 1/2" slices. Cut slices into
1/2" strips. Set aside. In shallow pan or plate, combine Rice
Krispies and spices. Set aside. Place flour in second shallow pan or
plate. Beat together egg whites and water. Coat potatoes with flour,
shaking off excess. Dip coated potatoes in egg mixture, then coat
with cereal mixture. Place in a single layer on foil lined baking
sheet coated with cooking spray. Bake at 400 degrees about 30 minutes
or until lightly browned. Serve hot with salsa, if desired.

Healthy, Homemade Gifts:
Herb Mixes

Notes:
These are all salt-free, so add your own salt to taste. Grind spice
blends in blender/spice grinder briefly before placing in jars. (Be
sure to wash blender/grinder well before using another spice blend.)

Find the recipes below.

Anytime, anywhere rub

 Use liberally on meat, fish, and vegetables.
1 tablespoon dried thyme leaves
1 tablespoon marjoram
1 tablespoon garlic powder
1 tablespoon paprika
1 1/2 teaspoon curry powder
2 tablespoons dry mustard
1 tablespoon onion powder
1/2 teaspoon dill weed
1 tablespoon ground celery seed
1 tablespoon ground black pepper
1 tablespoon dried oregano

Poultry seasoning

 Great on chicken and turkey! One tablespoon of mix should cover two
chicken breasts.
1 tablespoon rosemary
2 tablespoons thyme
2 tablespoons sage
1 tablespoon marjoram
1 tablespoon onion powder
1 tablespoon garlic powder
1 1/2 teaspoon black pepper

Chili spice mix

 Use two to four tablespoons for each batch of chili. Turn up the heat
with extra chili powder if you prefer your chili spicier.
8 tablespoons paprika
2 teaspoons coriander
2 teaspoons cumin
4 tablespoons mild chili powder
4 tablespoon turmeric
1 tablespoon onion powder
1 tablespoon garlic powder
2 teaspoons nutmeg

Mexican seasoning for burritos and tacos

Use two tablespoons for each batch of tacos.
4 tablespoon cornstarch (to thicken the sauce)
5 tablespoons chili powder
3 tablespoons paprika
2 tablespoons sugar
1 tablespoon onion powder
1 1/2 teaspoons garlic powder
1 1/2 teaspoons cayenne pepper
1 tablespoon cumin

Ranch dressing mix

 For dip: Stir one tablespoon of mix into one cup low-fat plain yogurt
or sour cream. Refrigerate overnight.
For dressing: Stir one tablespoon mix into 1 1/4 cups low-fat sour
cream and 1/4 cup low-fat milk. Refrigerate overnight
4 tablespoon dried parsley
2 tablespoons onion powder
2 teaspoons garlic powder
1 tablespoon dry dill weed
2 teaspoons paprika
2 teaspoons fresh ground pepper (or to taste)

Herbes de Provence

This herb blend is great on chicken and vegetables.
1 tablespoon thyme
2 tablespoons chervil
2 tablespoons rosemary
2 tablespoons summer savory
2 teaspoons lavender
2 teaspoons tarragon
2 teaspoons marjoram
1 teaspoons oregano
1 teaspoons mint
4 powdered or chopped bay leaves

Hoe Down Casserole


Ingredients




2 packages frozen baby okra (10 oz. each)

1 can tomatoes (28 oz.)

1 can corn (12 oz.)

1 sliced onion

1/2 tsp. salt

1/2 tsp. pepper

1 can Spam or Treet, sliced into patties

1 package corn bread mix (10 oz.)

Directions


Combine okra, tomatoes, corn, onion, salt and pepper into well greased casserole dish. Arrange Spam in patties on top of vegetables. Prepare corn bread mix. Spoon batter along outside edge of casserole. Bake uncovered at 425 degrees F for 20-25 minutes.
